Travis@House of Cards: Two fermentations occur to make this sparkling, the secondary ferment is in the bottle. It’s bottled aged on yeast lees for 36 months to add complexity and toasty notes.
Tasting Notes
Clear in colour, delicious and delicate. Green apples, pears and buttered toast dominate the aromatics. A persistent and fine effervescence carries the palate of grapefruit, lemon zest and cashews through the mouth. Perfectly in balance.

Trav and Liz are one of a growing Margaret River gang of young wine making families around the magical Caves Road stretch. Trav honed his winemaking skills at Amberley, Vasse Felix and Fermoy Estate, before turning his attention to his own special project – House of Cards. They are doing it organic. And doing it right. Really cool people, and delicious wine.

House of Cards is owned and operated by Elizabeth and Travis Wray; Travis managing the vineyard and making the wines, Elizabeth managing sales and marketing. They only use certified organic estate-grown grapes, open-top fermentation, hand plunging and manual basket pressing. It’s certainly doing it the hard way, but it must seem all worthwhile when they produce wines of such quality.
